i got several requests to post this bagel recipe after a very fun sunday brunch this past weekend. it was my first time making them, and i can swear by this recipe. after you've done it once, you'll be ready to whip these up anytime. we can thank uncle gordon for giving us this great baking book as a wedding gift.
Bagel recipe from “Ultimate Bread” by Eric Treuille & Ursulla Ferrigno
Total time about 2 hours
Ingredients:
2 tsp dry active yeast
1 ½ tbsp sugar
1 ¼ cups water
3 ½ cups unbleached flour, plus extra for kneading
1 ½ tsp salt
1. Sprinkle the yeast and sugar into ½ cup of the water in a bowl. Leave for 5 minutes; stir to dissolve. Mix the flour and salt in a large bowl (if you are using a stand mixer, go ahead and do this in the mixer bowl). Make a well in the center of the flour and pour in the dissolved yeast.
2. Pour about half of the remaining water into the well. Mix in the flour. Stir in the reserved water, as needed, to form a firm, moist dough.
3. Turn the dough out onto a well-floured surface. Knead until smooth and elastic, about ten minutes (if using a stand mixer, use a medium speed until it is too stiff to use, about 7 minutes, then do the rest of the kneading by hand). As you knead the dough, gradually work in as much extra flour as you can comfortably knead- this dough should be very stiff and firm (they ain’t kidding…)
4. Put the dough in a lightly oiled bowl, turning the dough to coat, and cover with a dish towel. Let rise until doubled in size, about 1 hour (I found it took a bit longer- I put it in a slightly warm oven for the last 20 minutes or so). Punch down, then let rest for ten minutes.
5. Cut the dough into eight equal pieces. Shape each piece into a ball. Form each ball into a ring by inserting a finger into the center of each one.
6. Work the finger in a circle to stretch and widen the hole. Then twirl the ring around the index finger of one hand and the thumb of the other hand until the hole is about 1/3 of the bagel’s diameter (no joke- make the hole bigger than you’d think because they will rise significantly!)
7. Place the bagels on a lightly oiled baking sheet, then cover with a damp dish towel and let rest for 10 minutes.
8. Bring a large pan of water to a boil, then reduce the heat to allow the water to simmer. (I added about 1 tbsp sugar to the water based off of another recipe) Use a perforated skimmer to carefully lower the bagels into the water in batches of two or three at a time. Boil uncovered, turning them once, for about 1 minute. Remove from the water and drain.
9. Transfer the drained bagels to a lightly oiled baking sheet (per another recipe, I also coated the baking sheet with cornmeal to help bagels to not stick and for a bit of flavor). Bake in a preheated 425 degree F oven for 20 minutes, until golden. Cool on a wire rack.

it's that time again, people!!! come out and support us at a hip hop showcase at the san mateo performing arts center on november 14th. there's only one nighttime show, and we are aiming to fill it up, so bring a hot date.
i really can't believe how fast the year has flown.... and i never posted the rest of our wedding photos! so, almost 11 months later.. here they are.
the vox books feature isn't currently working, and it made me realize how much i've enjoyed being able to list books on here as i read them. so, i'm just going to tell y'all what i've been reading in a post instead.
Ingredients:
2 pints mango sorbet (4 cups)
1 pint vanilla ice cream (2 cups)
6 ounces fresh blackberries (1 1/2 cups)
1/4 cup sugar
2 tablespoons crème de cassis (black-currant liqueur)
Equipment: a 9- by 5- by 3-inch loaf pan or other 7- to 8-cup capacity mold
Preparation:
Put sorbet and ice cream in refrigerator until evenly softened, 45 minutes to 1 hour.
Meanwhile, purée blackberries, sugar, and cassis in a blender until smooth, then strain through a fine-mesh sieve set over a bowl, pressing on and then discarding solids. Freeze to thicken slightly until ice cream is ready, 20 to 40 minutes, then stir until smooth.
Lightly oil loaf pan, then cut a piece of parchment to fit bottom and long sides of pan, leaving at least 3 inches of overhang on each side.
Fill pan decoratively with spoonfuls of sorbet and ice cream, pressing down and filling empty spaces with blackberry purée as you go. Smooth top, pressing down with back of spoon to eliminate air spaces, then fold parchment flaps over top and freeze until solid, at least 3 hours.
To unmold, run a thin knife along short sides of pan to loosen mosaic, then open parchment and invert onto a flat serving dish, discarding parchment.
Cut mosaic into 1/2-inch-thick slices.
Cooks' note:
Mosaic can be made 5 days ahead and frozen, covered with plastic wrap.
i promised that i would try not to be a big complainy-pants, but it was a little hard not to be disappointed in the eat real festival yesterday. it was a great excuse to hang out at jack london square on a sunny weekend afternoon, that much i can't argue with. unfortunately what ruined it were the long lines. i just noticed a reader's comment on sfgate which referred to the lines as "manageable," and i just can't agree... an hour's wait for a plate of paella? when we found a line for turkish food that wasn't too bad, we waited about 15 minutes, just to hear the people in front of us get told that they had run out of food entirely, just like three other booths next to them.

i just had to post this video of the beginning of pam and thom's wedding ceremony. thom sang her their favorite song, "the book of love" by magnetic fields. the shaky camera work can definitely be attributed to me being teary and reaching for tissues the whole time! and go figure i ran out of space on the memory card mere seconds before the most perfect of of all lyrics "....... you oughta give me wedding rings."
